GRILLED CHICKEN DIABLO CIABATTA

(Serves 1-2)
Ingredients:
  • 1 (5 oz) chicken
  • 1 Ciabatta bun
  • 1 T. garlic butter (store bought or homemade)
  • 1 T. olive oil
  • 2 T. Green Mill Diablo Wing Sauce
  • 1/2 cup (2 oz) shredded lettuce
  • 1/3 cup Green Mill Diablo Wing Sauce
  • 1 oz Monterey Jack cheese
  • 1 oz grilled sliced red onion (about 6 circles)
  • 2 sliced tomatoes
  • 1 T. mayonnaise (optional)
Preparation:
  1. To marinate chicken, place chicken breast in zip lock bag.
  2. Add olive oil and 2 T. Green Mill Diablo Wing Sauce. (can be done 1-2 days ahead of time)
  3. Place chicken on medium pre-heated grill, turn to medium low and cook about 3 minutes on both sides if sauce is burning turn to low.
  4. Place red onion on grill as chicken is cooking on second side.
  5. Cook chicken until internal temp is to 165.
  6. Butter both sides of bun, place cheese on top half and toast in 350 oven about 3 minutes until cheese is melted.
  7. Place lettuce on bottom bun and place on serving plate.
  8. Place 1/3 cup Green Mill Diablo Wing Sauce in saute pan and heat, place chicken breast in pan and coat both sides.
  9. Place chicken on bun with lettuce.
  10. Top with sliced tomato and grilled onion.
  11. Serve with mayonnaise on the side or on the bottom half of bun. (optional)
