BONELESS BUFFALO WINGS

(Serves 2-4)
Ingredients:
  • 9 oz chicken tenders or chicken cut into 1 oz strips
  • 1 cup buttermilk
  • 2 cups flour
  • 2 tsp black pepper ground table
  • 2 tsp salt (sea salt works best)
  • 3/4 cup vegetable oil
  • 1/3 cup to 1/2 cup Green Mill Buffalo Wing Sauce or Green Mill Diablo Wing Sauce (Depending on how spicy you want them)
  • 8 pieces of celery sticks
  • 2 oz Blue Cheese dressing or Ranch dressing
Preparation:
  1. Place chicken in zip lock bag and fill with 1 cup butter milk. (can be done 1-2 days ahead of time)
  2. In separate zip lock bag fill with flour, black pepper and salt, seal and shake until well mixed. (can be done 1-2 days ahead of time)
  3. Place 3/4 cup oil In large saute pan over medium high heat. (if pan is not big enough you may need to do this twice in two batches)
  4. Drain butter milk from chicken using a strainer, place chicken in seasoned flour bag and shake chicken until well coated.
  5. Remove chicken from bag, gently shake extra flour off, then place in oil spread out, and not overlapping.
  6. Turn heat to medium and cook about 3-4 minutes or until golden brown, turn to other side and cook another 3-4 minutes to golden brown or inside temperature reaches 165. (if two slow turn heat back up to medium high)
  7. Place paper towel on plate and place with chicken.
  8. In separate saute pan, heat Green Mill Buffalo Wing Sauce or Green Mill Diablo Wing Sauce, place chicken in the sauce and toss.
  9. Place chicken on plate and serve with celery sticks and desired dressing.

Note: instead of tossing with Green Mill Buffalo Wing Sauce or Green Mill Diablo Wing Sauce, you could drizzle over No Bone Wings or serve has a dipping sauce.
